Phillips Mushroom Farms began in 1927 when William Phillips started a small mushroom operation in Kennett Square, using ice for temperature control to make mushrooms a year-round crop. His sons later expanded into packaging and marketing, and in 1979 became the first successful commercial indoor shiitake growers in the U.S. Now in its fourth generation, the family business is the largest grower of specialty mushrooms in the country, producing over 80 million pounds a year across about 1.5 million square feet of growing space in the self-styled "Mushroom Capital of the World."
